After being a pioneer in making sparkling Timorasso, and observing the great evolution potential of the grape varietal once in contact with the yeast, I decided to go even further and leave this wine for 36 months on the yeast, giving birth to a Chiaror Sul Masso Metodo Classico sparkling. Complex character, the evolved honey and acacia notes alternates with the floral and fruity ones, thin and persistent bubbles, with a great minerality
Intense straw yellow with golden reflections, brilliant, lively and beautiful foam, fine and persistent perlage.
Slight hint of bread crust, light custard, fruity notes of apple and pear, dried fruit, pleasant floral notes.
Great structure, rightly mineral and fresh, balanced and with a long aromatic persistence, balsamic with hints of herbs.

Caffè, caramella mou.. bolla sottile, viaggia più sulle note tostate evolute che sulle freschezze ma viene bilanciato dalla tempra del timorasso (lo adoro, ma non per tutti)
